Turkey Bolognese! leftover Turkey - yum!


Turkey - the go to protein for most American households during the Thanksgiving Day holiday.

Turkey salad, turkey soup, turkey sandwiches - enough is enough? But what to do with this left over turkey?

Pasta! Is there anything better than pasta? The rich taste of the tomato sauce, delicious crisp vegetables?

Let's make Turkey Bolognese!

Ingredient list:

1/4 cup of olive oil

1 onion, chopped

4 garlic cloves, minced

1 stalk celery, chopped

1 pound of shredded cooked turkey

3 cups marinara sauce

1/4 cup chopped basil

salt and pepper to taste

1 pound of spaghetti ( or any type of pasta you like)

freshly grated parmesan

Prep all of the above, and in a large skillet add the oil and once it heats up, add onions, garlic and saute' until tender and translucent. ( about 5 or 6 min) Add the turkey and marinara sauce.

Turn the heat down a and let simmer for about 10 to 15 minutes. Stir it occasionally. Stir in the basil leaves. ( if you used dried basil, you may add at the same time you added the turkey).

Salt and pepper as you like. ( remember the Parmesan is salty, so don't add a lot)

While this is cooking, get a large pot of boiling salted water and add pasta. Will take about 7 to 8 minutes to cook.

Drain the pasta ( save about a cup of the cooking liquid. Add the pasta to the sauce and toss to coat, adding the pasta water you saved to moisten as you like.

Serve hot with grated parmesan! YUM!
